La Forest: The domain has 4.5 ha. It is on the left bank of the Serein. Southeast exposure. This is classic Chablis. Either it is on the right bank with southern exposure, or on the left bank. Forest is a closed valley, protected from the dominant winds, from west and south-west. At the same time a little protected from the north wind by the croup of Montmains. It is a terroir which is not precocious. It takes time to warm up. On the other hand, it has the ability to store up heat and release it. You have to be patient with it. I see it a bit like a marathon runner with a superb finish.
We are on clay-limestone soils, like everywhere in Chablis with its Kimmeridgian marls. What makes the strength of Forest is the quality of its clays, very different. As far as colors are concerned, there is a bit of everything. There is of the ochre, the white, the red, the blue, the green. It is arranged in a very different way. In terms of topography, we are on a convex coast. The part where there is a break of slope, we are a little eroded by the winds and in the top and in the bottom, we have relatively deep grounds.
The domain: The Dauvissat family has owned the estate since 1899. This family vineyard covers more than 9 hectares, the vines are on average 20 to 50 years old. Vincent Dauvissat has been working in biodynamic viticulture for many years, it is a state of mind and a strong conviction. Far from him the media research, his wines speak for themselves: purity and minerality are the key words.
The Winemaker The rigorous and passionate Vincent Dauvissat has been managing this mythical property since 1989. He succeeded his grandfather Robert, who was already bottling in 1931, and his father René, whose wines were renowned. Étiennette, Vincent's daughter, has now joined her father. The vineyard has always been tended like a garden and the wise yields deserve all the honors.
Since 2002, the estate has been receiving biodynamic preparations, without claiming certification. The vinification in barrels (which never takes precedence over the material) is not very interventionist, allowing the expression of the various climates, especially with aging. Chablis of a rare sincerity, of a pure, compact, vibrant style, relatively unprotected in sulfur.
